Ethos is built in one of Hobart's oldest and quirkiest buildings. It was constructed in 1820 as the stable for The Old Hobart Hotel and then more recently an old chemists. Whilst renovations were taking place, builders managed to salvage a large selection of old chemist bottles and film processing equipment which have now been integrated back into the site with the glass bottles being been made into chandeliers.
The ethos of Ethos is to source ethical commodities for the success of the restaurant and to buy from local providers in Tasmania to help promote family run businesses. Handmade beer, soap and plates are used, as well as recycled tables and chairs enhancing the homely and welcoming vibe.
To say thanks for helping in their success, relationships have been built with the farmers and craftsmakers that help make Ethos a great place and they are always looking for new and exciting opportunities. The ever changing daily menu comprises the freshest ingredients with meals such as the Bruny Island heirloom pork or veal sweetbreads proving to be very popular.
Having won the Gourmet Traveller wine list of the year awards 2011, the drinks menu follows the same philosophy as their food, in that they are keen to support the locals and family owned vineyards to make their produce truly Tasmanian. See the website for the full list of collaborators

Breakfast. Saturday: 9am-12pm, Sunday: 9am-2pm
Lunch. Tuesday-Saturday: 12pm-2.30pm
Dinner. Tuesday-Saturday: 6pm-late
