The Source
Tasmania
The Source is all about combining fine dining with expert wine tasting. Joseph Burton, the resident sommelier, is certified by the Court of Master Sommeliers and also a member of the International Sommeliers Guild; safe to say, if you fancy a drop of the good stuff you would be wise to let him do the recommending.
As for the French-inspired cuisine, the restaurant recommends choosing five, seven or nine small courses that are tailored to your needs, all masterfully crafted by chef Phillipe Leban. The dinner menu is full of exquisitely imaginative delights. Spanner crab and smoked oyster with foie gras; panfried scallop gnocchi, perpetual spinach and yuzu puree that is complimented with ponzu foam; whole roast duck, braised witlof, apple and miso puree in coffee sauce.
For dessert, go for the unique chocolate pastry dessert; spiced chocolate and fig and chocolate puff pastry, drizzled with a red wine and raspberry sauce. Leave your comfort zone and indulge in fine dining heaven.
