Dairy cows are in abundance on the island of Tasmania, resulting in plenty of cheese being made from cows milk, and a great range too. But if you look around you will also find cheeses made from milk from goats, sheep and even buffalo! There is fresh cheese that's just been made and is ready to eat, contrasting with vintage cheddars that may have been aged as long as two years. You may find a cheese you think you know such as feta, chevre or cheddar, but it may have a delightful new twist, having been marinated or infused with a variety of herbs or flavours.
